He would rather do take out then wait at a table with hungry kids. This soup is a copy cat recipe from the Chili's restaurant. I haven't ate at a Chili's restaurant for over ten years and I never ordered any soup. When I suggested this soup, he wasn't a big fan. So, I suggested I should make it for the kids and he could make his favorite can soup. He said alright. Then I made the soup. It smelled really good. My son tried it and loved it. So, my husband tried it. Then he had a bowl of it. Then he even had it as leftovers. Yes, he liked it that much. It is really good. I even had some leftovers and so did my son. This is an easy meal to make. Since I love fire roasted tomatoes, I substituted them. </span></span><br />

<li><span style="font-family: Georgia,"Times New Roman",serif;"><span style="font-size: small;">Add the black beans, enchilada sauce, green chili, and the tomatoes.</span></span></li>

The best part to me about blogging is how easy it is for me to find a recipe we like and the photos of the kids. They have really grown up so fast since I started this blog. </span></span><br />

So, I figured I would try this dish. The original recipe called for frozen broccoli but I prefer fresh every time. The original recipe had bacon crumbles on top but I hate cooking bacon so I didn't add it. This recipe does look pretty boring. I was hoping the parsley would brighten it up but I don't think it worked. Boy, I am glad it tastes better than it looks! I even told

<span style="font-family: Georgia,"Times New Roman",serif;"><span style="font-size: small;">How has your year been going so far? Are you still going strong on your New Year resolutions? Have you broken any? Our New Year resolution is just to be a little more frugal and eat more fruit. It really isn't that hard. Also, the other New Year resolution is the kids and I are doing a number of exercises for the number of the day into the year which means if it is the 9th day of the year we will do 9 sit ups, stretches, push ups, jumping jacks, etc. So, far so good but I am unsure when we hit day 50 of the year! </span></span><br />
<span style="font-family: Georgia,"Times New Roman",serif;"><span style="font-size: small;"> I have started cooking new dishes again. Recently, I have been trying to make easy one skillet meals. The kids like them. My husband likes them. Plus I can add additional vegetables which no one complains. Whether they notice or not, they haven't said anything.</span></span><br />
<span style="font-family: Georgia,"Times New Roman",serif;"><span style="font-size: small;"> I may spend less time preparing supper but we still eat at the table as a family. I can't remember the last time we have not ate at the table. I think it is less messy plus we talk. We normally will ask about the best part of their day. It is cute how the kids go into stories about their favorite part of the day. The stories they tell us tend to make us laugh. When my oldest daughter lived at home, she always went last. Her stories always took the longest. Any other time of the day, she spoke the least. I think she was saving it for supper. </span></span><br />
<span style="font-family: Georgia,"Times New Roman",serif;"><span style="font-size: small;"> My children practiced their photography skills and took the photos for me. I asked them to take a photo of themselves but they didn't. I will have to get some photos of them soon. </span></span><br />

<li><span style="font-family: Georgia,"Times New Roman",serif;"><span style="font-size: small;">Season with salt and pepper. </span></span></li>
<li><span style="font-family: Georgia,"Times New Roman",serif;"><span style="font-size: small;">Bring to a boil and cook for 10 minutes or until the pasta is the desired tender.</span></span></li>
<li><span style="font-family: Georgia,"Times New Roman",serif;"><span style="font-size: small;">Stir in the spinach, heavy cream, Parmesan cheese, milk, and sausage. </span></span></li>

It really is beautiful with a spectacular view. The Edinburgh castle is one of Scotland's most visited attractions. During our visit, we were unable to visit the Holyroodhouse Palace since Queen Elizabeth was in residence. </span></span><br />

Normally, I did not see many men wearing the traditional kilt but it was nice to spot some. I did ask the family if anyone wanted me to bring them home a kilt. Sadly, my family said no. Since kilts are not cheap, I didn't buy one even with a lower than normal exchange rate. </span></span><br />

My philosophy is to eat your fruits and vegetables, then you can have some sweets. No wonder my kids will eat their vegetables. The first time I had a five bean salad was while I was in the military. I liked it but I like beans and green beans. My favorite is green beans so I doubled the green beans. </span></span><br />

The five bean salad was one of the side dishes. My husband will not eat this dish. He wouldn't even try it. The kids would try it but they preferred the macaroni salad. </span></span><br />

<li><span style="font-family: Georgia,"Times New Roman",serif;"><span style="font-size: small;">Rinse off the kidney beans, black beans, and garbanzo beans. Set aside. </span></span></li>
<li><span style="font-family: Georgia,"Times New Roman",serif;"><span style="font-size: small;">In a small bowl, combine the onion, sugar, vinegar, oil, salt, and pepper. </span></span></li>
<li><span style="font-family: Georgia,"Times New Roman",serif;"><span style="font-size: small;">Gently, toss all the ingredients in a large bowl. </span></span></li>
<li><span style="font-family: Georgia,"Times New Roman",serif;"><span style="font-size: small;">Lightly top with additional celery salt.</span></span></li>

I wanted something spicy and sweet which match these cookies. These cookies did not last. I really like spice so I did increase the amount of spice in the recipe. </span></span><br />

She has never frozen the dough and has made tray after tray of cookies. Why save some dough for later when she can have all the cookies today. I think we have made this meal at least three times. When I initially made this dish, I forgot to add the cheese (which is very unbelievable for me). Every since, we haven't added cheese. It is very easy and delicious recipe. However, it is very easy to burn the bottom of the skillet. </span></span><br />

It was crazy the mess he made just from chopping one onion. It even made him cry. The meal is made with one pan but it still appeared our kitchen was hit by a tornado created by our son. This is the perfect meal for a busy night. So everyone agreed that we should try this dessert. It is so good. It is very moist and dense. It didn't need any topping like frosting or powdered sugar. I think whip cream would be a nice addition but not a necessary. This dessert was gone by the next day. I will be making it again but next time I'll it with a different type of berry. <li><span style="font-family: "georgia" , "times new roman" , serif;"><span style="font-size: small;">Spray a 9 inch spring-form pan with nonstick cooking spray. Set aside. </span></span></li>
<li><span style="font-family: "georgia" , "times new roman" , serif;"><span style="font-size: small;">In a large bowl, combine the sugar, flour, baking powder, and baking soda. </span></span></li>
<li><span style="font-family: "georgia" , "times new roman" , serif;"><span style="font-size: small;">Add the butter cubes and combine until mixture resembles large crumbs.</span></span></li>
<li><span style="font-family: "georgia" , "times new roman" , serif;"><span style="font-size: small;">Remove 1/2 cup of the flour mixture and set aside in a small bowl.</span></span></li>
<li><span style="font-family: "georgia" , "times new roman" , serif;"><span style="font-size: small;">To the large bowl, add the sour cream, egg, and vanilla. Mix well.</span></span></li>
<li><span style="font-family: "georgia" , "times new roman" , serif;"><span style="font-size: small;">To the prepared pan, drop half of the batter by spoonfuls. </span></span></li>
<li><span style="font-family: "georgia" , "times new roman" , serif;"><span style="font-size: small;">Pat the batter down and about 1 inch up the sides of the pan.</span></span></li>
<li><span style="font-family: "georgia" , "times new roman" , serif;"><span style="font-size: small;">Add the strawberry puree to the pan and spread over the batter.</span></span></li>
<li><span style="font-family: "georgia" , "times new roman" , serif;"><span style="font-size: small;">Cover with the other half of the batter over the strawberry puree. Set aside.</span></span></li>
<li><span style="font-family: "georgia" , "times new roman" , serif;"><span style="font-size: small;">In the previously set aside small bowl, add 2 tsp sugar to the flour mixture. </span></span></li>
<li><span style="font-family: "georgia" , "times new roman" , serif;"><span style="font-size: small;">Sprinkle evenly over the cake.</span></span></li>
<li><span style="font-family: "georgia" , "times new roman" , serif;"><span style="font-size: small;">Bake the cake for 45 minutes and until lightly golden brown.</span></span></li>

<span style="font-family: Georgia,"Times New Roman",serif;"><span style="font-size: small;">It is summer. It is hot. So, I have been making hot porridge. Where is the logic? Well, my family have been trying these dishes without complaining. I guess when someone is cooking you breakfast with fresh fruit is always a plus. So, I made this porridge with amaranth. I have never cooked with amaranth but I really like the grain. It is smooth and fine. The recipe called for soaking the grain for 24 hours then straining it through a fine mesh strainer before cooking. I have cooked this recipe twice and both times I've soaked it. I hadn't research the grain but had just followed the instructions provided in the recipe. I'm unsure if the soaking is necessary. Other recipes do not state to soak the grain including the package of Bob's Red Mill. The appearance of the grain doesn't appear to change with the soaking and will not plump up. So, I guess it will be your choice to soak or not to soak. I will say that I love amaranth. It still has a slight crunch to it after cooking. Of course I added toasted almonds for even more of a crunch. Again, I really loved this recipe since I've made it a couple of times. Even if it is hot outside, you should try some amaranth porridge today. </span></span><br />

<li><span style="font-family: Georgia,"Times New Roman",serif;"><span style="font-size: small;">Add the amaranth with the sea salt. Stir to coat. </span></span></li>
<li><span style="font-family: Georgia,"Times New Roman",serif;"><span style="font-size: small;">Add the milk and stir. Bring to a simmer. </span></span></li>
<li><span style="font-family: Georgia,"Times New Roman",serif;"><span style="font-size: small;">Reduce heat to low and cover. Stir often. </span></span></li>
<li><span style="font-family: Georgia,"Times New Roman",serif;"><span style="font-size: small;">Cook for at least 20 minutes or until the majority of the milk has been absorbed. The amaranth should be thick and creamy consistency with the grain being tender.</span></span></li>

In Maine, we would go strawberry picking around 4th of July. Last year, we missed it since we hadn't realized it was so early. I'm glad we take them since the kids love strawberries. My youngest daughter tells me that there is something wrong with people who don't eat strawberries. I think she is kidding. When I saw this recipe, I thought the kids would really love it. It has a sponge cake, strawberries, and whip cream. When my oldest daughter visits, I'll have to make this for her. It really is good. Surprising, the cake is cooked with a meringue topping. It is a good cake for a dessert like this since the cake is very thin. I really would make this dessert again. </span></span><br />

<li><span style="font-family: Georgia,"Times New Roman",serif;"><span style="font-size: small;">Seal the bag and allow to set in a cool place for 12 to 24 hours to form a sponge.</span></span></li>
<li><span style="font-family: Georgia,"Times New Roman",serif;"><span style="font-size: small;">In a large bowl, combine 1 package of yeast with the warm milk. Allow to rest for 5 minutes.</span></span></li>
<li><span style="font-family: Georgia,"Times New Roman",serif;"><span style="font-size: small;">Add the sponge mixture to the large bowl with the 2/3 cup water, olive oil, and 2 cups bread flour.</span></span></li>
<li><span style="font-family: Georgia,"Times New Roman",serif;"><span style="font-size: small;">Mix until just combined then add the salt.</span></span></li>
<li><span style="font-family: Georgia,"Times New Roman",serif;"><span style="font-size: small;">Mix for 8 minutes and the mixture is smooth and elastic.</span></span></li>
<li><span style="font-family: Georgia,"Times New Roman",serif;"><span style="font-size: small;">Place the dough into an oiled bowl and cover with plastic wrap. Allow to rest for about 90 minutes.</span></span></li>

We visited him often. I took my Mom to New Hampshire to visit family. My husband has been diagnosed with diabetes. I have been trying to change our eating habits. I will admit that I have made this dish several times. The family love it. My husband told me that he is going to make it. I'm not saying this dish is the best dish to make for a diabetic. I did double the vegetables. I reduced the potatoes. Also, I used the Jiffy baking mix since it had lower carbohydrates than Bisquick. I check the weather for North Carolina and Maine. Also, I check Edinburgh, Scotland since my Dad travels there a lot. I have Sidney on my phone since I know it is Summer there. Also, I check the weather in Florida. Well, I kept telling my husband how warm it was in Florida and he said lets go. My oldest daughter was visiting so it was fun. We went down for a couple of days. When we arrived home, it snowed. How different my children dress in Maine versus North Carolina. In Maine, my children had snow boots, snow pants, hats, etc. In North Carolina, they didn't even put on a thick jacket. Since they had no school for three days, we really didn't go anywhere even to the store. </span></span><br />

I had to make conversions for this cake. The cake doesn't have any liquids besides the lemon juice which is different. The cake isn't very sweet and is crumbly. Let's have souffle! I asked him if he had ever had a souffle? He said he associated souffles with the rich and he has never had a souffle. I always associate souffles with complicated. Well, I have now made a souffle. Was it hard? It had many steps. Did my souffle fall? It did fall a little. I should have filled my ramekins a little more to get more of a top. When it came out of the oven, it looked beautiful. This is when it should be served. Even if it falls, it will not affect the taste. We topped our chocolate souffle with vanilla bean ice cream. I will say this dessert did impress my husband. He told me that I spoil him. </span></span><br />

<li><span style="font-family: Georgia,"Times New Roman",serif;"><span style="font-size: small;">Gradually add 2 Tbsp sugar to the egg whites. </span></span></li>
<li><span style="font-family: Georgia,"Times New Roman",serif;"><span style="font-size: small;">Beat the egg whites until stiff peaks form. </span></span></li>

I figured I would make this thin custard sauce. I figured I would try it over some berries. It was really good. Did I like it over the souffle? No. This sauce is served chilled so it needs to be prepared in advance. My son assisted in making this sauce. He had to try it warm. He liked it. Also, he liked using the cooking thermometer. To him, this dish was more like a Science experiment. My husband liked it. He thought it would have been a good topping for the Angel Food cake in which I had made the prior week.</span></span><br />

<li><span style="font-family: Georgia,"Times New Roman",serif;"><span style="font-size: small;">While continuing to whisk, heat the mixture until it thickens. The mixture temperature should reach 175 degrees F. </span></span></li>
<li><span style="font-family: Georgia,"Times New Roman",serif;"><span style="font-size: small;">Remove the mixture from the pan and pour the mixture into a heatproof bowl. </span></span></li>

I thought it seemed a little dry with no flavor. I really didn't think my husband would like it. Well, he loved it. I really loved this recipe. I would definitely make this cake again. I even had big plans to make a frosting with it but I didn't. My husband didn't care. He ate the majority of this cake. He had picked the lemon flavoring which I am glad. <span style="font-size: small;"><span style="font-family: Georgia,"Times New Roman",serif;">I finally made this cake. I have been wanting to make it for awhile. When I suggested it, my daughter said sure but my two guys were not interested. I didn't want to make a cake for only two people. Then we went to the store. The store had samples of different cakes to sample. I had my guys try this cake. They both liked it. Then I told them the name. So, they agreed I should make the cake. They told me that my cake was better than the one they had tried at the store. I love my guys. They say the sweetest thing to me. My daughter like it a lot too. The recipe calls for coconut but you can't taste it. I crushed the pecans small for my husband. He isn't the biggest fan of nuts. Also, I limited the pecan decorations on the cake so he could take them off and give them to me. If you want a taller cake, then I would double the batter but this size was perfect for us. I used 2 pans instead of 3 since I didn't want to rotate pans during baking it. </span></span><br />

<li><span style="font-size: small;"><span style="font-family: Georgia,"Times New Roman",serif;">Add the eggs, one at a time, and beat well before adding the next egg.</span></span></li>
<li><span style="font-size: small;"><span style="font-family: Georgia,"Times New Roman",serif;">Add the vanilla and combine.</span></span></li>
<li><span style="font-size: small;"><span style="font-family: Georgia,"Times New Roman",serif;">In a small bowl, combine the flour, baking soda, and salt. </span></span></li>
<li><span style="font-size: small;"><span style="font-family: Georgia,"Times New Roman",serif;">Add a little of the flour mixture then alternating with the buttermilk. Combine well.</span></span></li>
<li><span style="font-size: small;"><span style="font-family: Georgia,"Times New Roman",serif;">Fold in the pecans and the coconut.</span></span></li>
<li><span style="font-size: small;"><span style="font-family: Georgia,"Times New Roman",serif;">Evenly distribute the batter between the two pans.</span></span></li>

We go grocery shopping every other day so it really is no big deal to change. Just some nights, we are tired and really don't want to cook. My husband is suppose to cook Monday through Thursday. Then I cook Friday through Sunday. I plan the meals on my days and my husband plans his meals. If you make a menu, do you stick to it? <span style="font-family: Georgia,"Times New Roman",serif;"><span style="font-size: small;">It seemed like this year was crazy when it came to time management. I really don't know where it went. I have been spending more time trying to get organized which could be what is taking up my time. One of my goals for next year will be to continue to become organize. Another goal will be to bake more. I'm going to try new recipes inspired from The Great British Bake Off except for next week. Next week, I'm going to post a recipe for Italian Cream Cake. I've been wanting to try baking the cake for awhile. </span><span style="font-size: small;">Doesn't Italian Cream Cake sound good? Also next year, I'm going to do a repeat year. Many of the recipes I will be making for dinner will be past recipes I've posted. So, my plan is to post my menu for the week on Monday for which recipes I'm repeating. During the week, I hope to make a post but on Friday I will be posting new recipe I had told you about the previous week. </span><span style="font-size: small;">Even if I have an epic fall, I will let you know even though we will still eat it unless it is burnt. Then only the trash will get to devour the creation. Also, I'm going to let the kids take more pictures.
