White Chicken Chili

This weekend, I will be cheering for the New England Patriots. I do like the Patriots but it isn't like I even have a choice. My Uncles are ecstatic. My Maine friends are excited. It is the only professional football team I have watched in person. Are you going to watch the game? Or will you be watching the commercials? I think my daughter will only be watching the game for the Halftime show. Since chili is a great dish to make while watching football, I decided to make the dish our cousin made this past summer. It is a little spicy with tender chicken and beans. It is perfect for a cold day.
White Chicken Chili
1 tsp vegetable oil
1 large onion, chopped
3 cloves of garlic, minced
4 cups chicken stock
2 (14.5 oz.) cans Northern beans (drained and rinsed)
5 cups rotisserie chicken, shredded
2 tsp chili powder
2 cups salsa
8 oz. pepperjack cheese, grated

Directions:
  1. In a large pot, heat the oil over medium heat.
  2. Add the onion and garlic. Saute for a few minutes.
  3. Add the chicken stock, beans, chicken, chili powder, and salsa.
  4. Allow the dish to simmer for 30 minutes.
  5. Stir in the cheese and allow to melt.

Chili Mac

Recently, I had some unexpected time off from work so I decided to paint my our bedroom. Since I love the color blue, it was agreed the room would be blue. It didn't matter two other rooms in our house are blue too. Of course, the rooms are all different shades of blue. My husband didn't argue about the color our room that I picked. While we were painting, I accidentally touched the wet wall with my hair. I am talented like that. I turned to my husband and asked him if I actually had paint in my hair. He told me yes so I told him that he could call me Marge Simpson from now on. Don't worry I wasn't painting in the kind of dress she wears. If I had, I would have had paint on the dress too!
Zombie Brains aka Chili Mac
1 lb ground hamburger
1 medium onion, chopped
1 small red bell pepper, chopped
3 garlic cloves, minced
1 Tbsp chili powder
1 tsp ground cumin
1/4 tsp ground black pepper

6 oz. dry pasta
1 (14.5 oz) can fire roasted tomatoes
1 (15 0z.) can kidney beans, drained
1 (8 3/4 oz.) can sweet corn, drained
1 (8 oz.) tomato sauce
1 (6 oz.) can tomato paste
4 cups chicken broth 
2 cups water
1 cup shredded Colby cheese

Directions:
  1. In a large pot, brown the ground beef over medium heat for about 5 minutes. 
  2. Add the onion, red pepper, and garlic. Cook for 2 minutes.
  3. Sprinkle the chili powder, cumin, and black pepper. Stir well.
  4. Add the uncooked noodles, tomatoes, kidney beans, corn, tomato sauce, and tomato paste. Stir well.
  5. Add the 4 cups chicken broth and water. Bring to a boil.
  6. Reduce the heat to low and allow to simmer uncovered for 10 minutes or until the noodles are tender. If needed, add more water.
  7. Sprinkle cheese on top before serving.

Stove Top Chili Mac

We just arrived home from vacation. I really think I need a few days longer to rest. We traveled from Maine to Mississippi to Georgia to Virginia to New Jersey and finally home. My children ate catfish, rode horses, and went to an amusement park. The best part of our trip was visiting with friends and family. 
After this trip, I needed something quick for supper. (Sorry, no catfish recipes here.) I made extra to freeze for another time. I did think the original recipe had no chili powder in it and was called chili mac so I had to add some.
Stovetop Chili Mac
1 lb. rigatoni pasta
1 tsp. olive oil
3 cloves of garlic, minced
1/2 medium yellow onion, chopped
1 lb. hamburger
1 Tbsp. chili powder
2 tsp. ground cumin
Salt and pepper
1 cup corn kernels
1 small zucchini, shredded
1 can (28. oz) fire roasted tomatoes
4 oz. cheddar cheese, grated

Directions:
  1. Cook the pasta according to the package directions.
  2. While the pasta is cooking, heat the oil in a large skillet over medium heat.
  3. Add the onion and garlic. Saute for about 3 minutes.
  4. Add the hamburger and increase the heat to medium high. Cook for 5 minutes while breaking up the meat.
  5. Add the cumin, chili powder, salt, and pepper. Stir until incorporated.
  6. Add the corn and zucchini. Cook for about 3 minutes.
  7. Add the can of tomatoes with juice to the pan. Stir well.
  8. Simmer the mixture for 5 minutes. Add additional seasonings if needed.
  9. In a serving dish, add the pasta and top with the meat mixture.
  10. Sprinkle the dish with cheese and serve.
