Green Smoothie

Almost everyday, my son has been making a smoothie. He likes smoothies but I think it is more that he gets to make all the decisions. He is the youngest. So, I asked him if he wouldn't mind making me a smoothie. This smoothie is totally his concoction. He doesn't even add sweetener. You may want to add a little honey or sugar but I thought it tastes pretty good. The main reason why I wanted him to make me a smoothie was for me to show him how he could make it into a frozen smoothie. He thought it was so cool that he took the smoothie and ate it all. He didn't even share. Good thing I have two different cups so I could make another frozen smoothie.
Green Smoothie
1 medium banana, cut into slices
1/2 cup baby spinach leaves
1 kiwi, peeled and cut into slices
1 ( oz) container of vanilla yogurt
1/2 skim milk

Directions:
  1. In a blender, mix the banana, spinach, kiwi, yogurt, and milk until well blended.
  2. If the smoothie is to thick add a little more milk until the desired consistency.
  3. Add the smoothie mixture into a Slush maker to make a frozen smoothie.

Yogurt Pancakes

My niece spent the night this past weekend. So, I made the children pancakes the next morning. Now, my son is not a big pancake person. He would rather have eggs. He ate five pancakes and wanted more. My youngest daughter loves pancakes and she had at least five pancakes. My niece ate five pancakes and she wanted more. I'm just lucky my husband was able to have two pancakes. I was able to have two pancakes too. They even wanted my pancakes but I was able to distract them.
Yogurt Pancakes
1/2 cup all purpose flour 
1 Tbsp sugar
1 tsp baking soda
1/2 tsp salt
1 cup Greek yogurt
2 eggs, whisked slightly
butter for the skillet
vegetable oil for the skillet

Directions:
  1. In a bowl, mix the flour, sugar, baking soda, and salt until just mixed.
  2. Add the yogurt and eggs. Mix until just combined.
  3. Heat a skillet over medium heat.
  4. Add about 1 tsp vegetable oil and 1 tsp butter to the skillet. 
  5. Add 1/4 cup of batter to the skillet and cook until top is bubbly.
  6. Flip and cook the other side until golden brown.
  7. Add additional vegetable oil and butter to the skillet when needed. 
  8. Continue cooking the remaining batter in batches.
  9. Serve immediately.

-Greek yogurt is strained to remove the whey.

Peanut Butter & Yogurt Dip

Has school started where you live? My children still have 10 more days to enjoy their summer before heading back. What can we do in 10 days? I think most of it will just getting ready to go back. Its hard work. I have to establish a bed time routine again so hopefully we won't be running after the bus. I have to make sure to get clothes that will last the kids for at least a couple of months. We did take advantage of the JCPenney's free haircut for kids in August. I had to get my haircut too since I was there. The school supply list has been started. I shop the flyers for the best sales since I try to stock up on a few extra supplies when they are cheap.
As a kid, my favorite part was wearing my new school clothes. I wasn't allowed to wear them until school starts. After the first day of school, I was ready for summer. My children love school especially visiting with their friends so they are counting down. Now, if they would only stop fighting with me about reading daily! One of things I have started to do is try new quick snack and lunch foods. I saw this recipe in the weekend coupon section. I thought my son will like this since it is his two favorite things together. He loved it especially with the grapes. I will be including this dip with fruit in his lunch box this year. Yum!
Peanut Butter & Yogurt Dip
1/2 cup creamy peanut butter
1 (6 oz) container of vanilla yogurt
3 cups assorted sliced fruit 

Directions:
  1. In a medium bowl, combine the peanut butter and the yogurt.
  2. Serve with the fruit
