My husband hasn't been feeling the best lately. I asked him if he wanted me to make him some soup. His request was Chicken and Rice. I have made this recipe several times before for him. My husband loves rice. He prefers rice over noodles so this is his favorite chicken soup.
Chicken and Rice Soup
2 Tbsp olive oil
1 yellow onion, chopped
3 carrots, shredded
2 celery stalks with tops, chopped
2 cups of rice
2 cloves garlic, minced
3 Tbsp flour
2 quarts of chicken stock
1 cup chicken, cooked and shredded
3 cups of water
1 tsp salt
1/2 tsp pepper

2 cups of rice
2 cloves garlic, minced
3 Tbsp flour
2 quarts of chicken stock
1 cup chicken, cooked and shredded
3 cups of water
1 tsp salt
1/2 tsp pepper
Directions:
- Heat 1 Tbsp oil in a large pot.
- Add the onion, carrots, and celery. Cook for 4 minutes.
- Add the garlic cloves and cook for 1 minute.
- Add one cup of rice and stir for 1 minute so the rice toast.
- Clear a corner of the pot with no vegetables.
- Add 1 Tbsp oil and add the flour to a corner of the pot.
- Stir the flour and cook for 1 minute.
- Add the chicken stock and water. Cook for 5 minutes. Stir.
- Add the other cup of rice and stir. Cook for 10 minutes.
- Add the cooked chicken and season to taste. Simmer for 10 minutes.
