Caesar Salad Dressing

At supper, we often have a salad. Our salads aren't fancy. They usually contain baby spinach. We usually serve the salad with store bought dressing. I really should make my own dressings since they are pretty easy. My son loves to help since he gets to adapt the dressing to his taste. Well, my sister recommend this recipe. She told me it is her favorite Caesar Salad. I can see why. It is full of flavor. I should warn you that you must like garlic. We like garlic so we will be making this recipe often. I served the lettuce with Parmesan cheese and croutons.
Caesar Salad Dressing
5 cloves garlic, finely minced
2 tsp Dijon mustard
1 Tbsp vinegar
2 Tbsp mayonnaise
1/2 cup olive oil
1 Tbsp lemon juice
1/4 tsp salt
1/8 tsp black pepper

Directions:
  1. In a blender, combine the garlic, mustard, vinegar, and salt. Mix thoroughly.
  2. Add the mayonnaise and blend thoroughly.
  3. In a slow stream, add the olive oil into the blender through the lid. Mix thoroughly.
  4. Add the lemon juice with the black pepper. 
  5. Scrape down the dressing into a bowl and season to taste.

Homemade Croutons

Since I know October seems to be the month of candy, I try to fight against it with additional vegetables. Salads are always an easy solution. Usually, I do not make my own croutons but I had purchased a baguette and we didn't eat it. It was pretty hard so I had to think of some ideas for the baguette. Some thoughts were using it to hit a pinata. Let the kids use it as a sword. Put it in the freezer which it would have been forgotten until years months later. I figured it would make great croutons which it did. I cut the bread into triangles so they looked like teeth.
Shark's Teeth aka Homemade Croutons
1 baguette, cut up into bite size pieces
1 Tbsp olive oil
2 tsp dried oregano
1/4 cup Parmesan cheese, grated
1/2 tsp sea salt

Directions:
  1. Preheat broiler to high.
  2. Line a baking sheet with parchment paper. Set aside.
  3. In a bowl, toss the bread with the olive oil, oregano,cheese, and salt.
  4. Spread the bread in one layer onto the baking sheet.
  5. Toast the bread for about 5 minutes or until the bread is golden brown.
  6. Remove from oven and allow to cool before serving.

Chinese Chicken Salad

I don't want to brag or anything but it has been in the high 80s in Maine lately. I know the rest of the country have probably reached these temperatures months ago but it has been hot here. It has been too hot to cook. It has been so hot that some of us have even entered the ocean waters. Since it is hot in the house, I have not been cooking lately. Even the thought of standing in front of a stove makes me hot. However, the refrigerator is another story. The freezer and I are more than acquaintances. Salads are what we have been eating a lot of lately.
Chinese Chicken Salad
1 head of romaine lettuce, torn into bite size pieces
1 cup baby spinach leaves
1 cup cabbage, shredded
2 carrots, shredded
1 cup snow peas
1 cup chow mein noodles
1 cup cooked chicken
1/2 cup peanut dressing (following) 

Directions:
  1. In a large bowl, toss the lettuce with the spinach, cabbage, carrots, and snow peas.
  2. Top with the chow mein noodles and chicken.
  3. Drizzle a little dressing on top and serve immediately.
Peanut Dressing:
1/3 cup vegetable oil
2 Tbsp lemon juice
1 Tbsp vinegar
1 Tbsp sugar
1/8 cup hoisin sauce
1/4 cup smooth peanut butter
1/8 cup water

Directions:
  1. In a bowl, combine the oil, lemon juice, vinegar, sugar, hoisin sauce and peanut butter.
  2. Add a little water until the desired consistency has been reached.
